Ως Οργανική Ύλη θεωρείται η ύλη που έχει σαν βάση της τον άνθρακα. Η Οργανική Ύλη (ή οργανικό υλικό, φυσική οργανική ύλη) είναι ύλη που προέρχεται από ζωντανούς οργανισμούς. Αποσυντίθεται, ή είναι προϊόν αποσύνθεσης, ή αποτελείται από οργανικές ενώσεις.Τα έμβια όντα και τα φυτά αποτελούνται από οργανική ύλη. Ο ορισμός της οργανικής ύλης ποικίλει ανάλογα με το θέμα για το οποίο χρησιμοποιείται.

Η οργανική ύλη είναι υπολείμματα των φυτών και των ζώων στο περιβάλλον. Βασικές δομές δημιουργούνται από κυτταρίνη, τανίνη, cutin, και λιγνίνη, μαζί με άλλες διάφορες πρωτεΐνες, λιπίδια, και σάκχαρα. Είναι πολύ σημαντική για την κυκλοφορία των θρεπτικών ουσιών στο περιβάλλον και παίζει ρόλο στη διατήρηση του νερού στην επιφάνεια του πλανήτη.
