Στην Οργανική Χημεία, Βιοχημεία και Χημεία τροφίμων το λίπος (γεν. λίπους) και στον πληθυντικό τα λίπη ονομάζονται οι οργανικές ενώσεις (εστέρες) μιας τρισθενούς αλκοόλης, της γλυκερίνης, με οργανικά οξέα (κυρίως μονοκαρβονικά κορεσμένα ή ακόρεστα). Ανάλογα με την κατάσταση που βρίσκονται υπό κανονικές συνθήκες (συνθήκες δωματίου), όταν είναι υγρά ονομάζονται έλαια, ενώ όταν είναι στερεά ονομάζονται στέατα ή απλώς λίπη. Τα λίπη συναντούνται συχνά στο ζωικό βασίλειο ως τριγλυκερίδια ή άλλα λιπαρά οξέα.
