Καραγενάνη

Η καραγενάνη είναι πολυσακχαρίτης, που χρησιμοποιείται ως προσθετικό τροφίμων. Η κύρια χρήση της είναι στα γαλακτοκομικά και στα κρεατικά, εξαιτίας των ισχυρών δεσμών της με τις πρωτεΐνες των τροφίμων. Υπάρχουν 3 κύριες ποικιλίες καραγενάνης.[1]

Στην Ευρώπη απαγορεύεται η χρήση της για οργανικά ή άλλα προϊόντα για βρέφη για προληπτικούς λόγους.[2] Στις ΗΠΑ επιτρέπεται για την παρασκευή οργανικών τροφίμων συμπεριλαμβανομένων χυμών, σοκολατούχου γάλακτος και βρεφικών προϊόντων.

Στο εμπόριο κυκλοφορούν 3 τύποι καραγενάνης:

  • Η Κάπα[3]
  • Η Γιώτα.[3]
  • Η Λάμδα

Είναι ασφαλής για χρήση σε παγωτό, γάλα σόγιας και σάλτσες, αλλά και σε προϊόντα επεξεργασμένου κρέατος. Συνήθως χρησιμοποιείται μαζί με άλλους σταθεροποιητές όπως η ξανθάνη. Συγκεκριμένα, στο τυρί κότατζ συμβάλλει στη βελτίωση της υφής, ενώ στο σοκολατούχο γάλα βοηθά στη σταθεροποίηση των πρωτεϊνών, δημιουργώντας μια απαλή αίσθηση στη στόμα. Πάντως, μελέτες σε πειραματόζωα έχουν δείξει ότι ορισμένες μορφές της καραγενάνης (κυρίως η μη διασπώμενη) μπορούν να προκαλέσουν καταστροφή κυττάρων του πεπτικού συστήματος, στη συνέχεια έλκος και κατ' επέκταση κακοήθειες στο έντερο.

Εφαρμογές

Οι καρραγενάνες που εξάγονται από τα κόκκινα φύκη (ροδοφύκη) έχει αναφερθεί ότι έχει πολλές εφαρμογές στην βιομηχανία τροφίμων καθώς και στον φαρμακευτικό κλάδο. Οι καρραγενάνες, απομονώνονται από τους πολυσακχαρίτες (SPs) των θαλάσσιων ροδοφυκών και χρησιμοποιείται ευρέως ως πρόσθετο τροφίμων, όπως γαλακτωματοποιητής, σταθεροποιητής, πυκνωτικό[4]. Από τις διάφορες μορφές της καρραγενάνης, η λ-καρραγενάνη είναι μια θειική γαλακτάνη, η οποία έχει απομονωθεί από κάποια ροδοφύκη και έχει αναφερθεί ότι έχει πολλών ειδών βιολογικές δραστηριότητες, ανάμεσα στις οποίες είναι και η σημαντική ανοσοτροποποιητική δραστικότητα έναντι όγκων μέσω της ενεργοποίησης του ανοσοποιητικού συστήματος[5]. Υδατικό διάλυμα PS από το θαλάσσιο φύκος Capsosiphon fulvescens έχει αναφερθεί ότι έχει ανασταλτική δραστικότητα σε καρκινικά κύτταρα ανθρώπινης κυτταρικής σειράς[6].Η χαμηλή τοξική δραστικότητα της καρραγενάνης, σε συνδυασμό με την αντικαρκινική και ανοσορυθμιστική του δραστικότητα θα πρέπει να ληφθεί υπόψη και μπορεί να συνίσταται σε αντικαρκινικές θεραπείες, ενώ μπορεί να δώσει μια σημαντική ανακάλυψη για την καλύτερη διαχείριση ασθενειών σχετικών με τον καρκίνο.
