Αμυλοπηκτίνη

Δομή της αμυλοπηκτίνης.

Η αμυλοπηκτίνη είναι ένας διακλαδισμένος πολυσακχαρίτης που συνιστά το κύριο συστατικό (κατά περίπου 70%) του αμύλου, ενώ το υπόλοιπο το αποτελεί ο γραμμικός πολυσακχαρίτης αμυλόζη. Η αμυλοπηκτίνη είναι ένα πολυμερές χιλιάδων μορίων γλυκόζης, ενωμένων μεταξύ τους με γλυκοζιτικούς δεσμούς τύπου α(1→4) και α(1→6). Οι περισσότερες μονάδες γλυκόζης είναι ενωμένες μεταξύ τους με δεσμούς α(1→4), ενώ οι διακλαδώσεις σχηματίζονται από τους δεσμούς α(1→6), που υπάρχουν σε διαστήματα περίπου 30 δακτυλίων γλυκόζης. Η αμυλοπηκτίνη μοιάζει πολύ με το γλυκογόνο, τον αποταμιευτικό υδατάνθρακα των ζώων, ο οποίος όμως εμφανίζει πολύ πιο έντονη διακλάδωση (κάθε 10 δακτυλίους γλυκόζης).

Οι διακλαδώσεις, σε αντίθεση με την ευθεία αλυσίδα της αμυλόζης, καθιστούν την αμυλοπηκτίνη διαλυτή στο νερό. Όπως και η αμυλόζη, η αμυλοπηκτίνη διασπάται κατά την πέψη από το ένζυμο α-αμυλάση.
