Tungau keju adalah jenis tungau yang hidup dengan memakan jamur yang tumbuh pada keju.[1][2] Meskipun terkadang dianggap sebagai serangga perusak, tungau keju dimanfaatkan oleh beberapa perusahaan pembuat keju untuk memprodusi keju.

Ciri-ciri umum

Tungau keju memiliki ukuran tubuh yang sangat kecil, yaitu sekitar 0,5 milimeter untuk tungau keju dewasa.[3] Seperti tungau pada umumnya, tungau keju memiliki empat pasang kaki.[1][3] Tubuh tungau keju berwarna putih dan koloni tungau keju akan tampak seperti debu pada permukaan keju.[1][3]

Tungau keju dimanfaatkan di beberapa negara Eropa untuk mengolah bahan keju. Salah satu contoh pemanfaatan tungau keju secara besar-besaran adalah produksi keju Milbenkäse di Würchwitz, Jerman.[4] Selain itu, tungau keju juga digunakan dalam pembuatan keju Mimolette (Acarus siro) dari Prancis dan keju Quark (Tyrolichus casei) dari Jerman.[4]

Di samping penggunaan tungau keju secara positif, tungau keju juga dapat menimbulkan dampak negatif seperti iritasi pada kulit atau usus.[2][3] Hal ini dikarenakan tungau yang hidup pada keju juga sering meninggalkan kotoran dan sesama tungau keju yang telah mati pada keju tersebut.[1]
