Sisa rasa

Sisa rasa[1][2] (bahasa Inggris: aftertaste) adalah kepekatan rasa dari makanan atau minuman yang dirasakan seketika setelah makanan atau minuman tersebut meninggalkan mulut.[3] Sisa rasa dari berbagai makanan dan minuman dapat memiliki kepekatan dan lama tinggal yang bervariasi, tetapi fitur utama dari berbagai macam sisa rasa terletak pada kemunculannya yang dirasakan setelah makanan atau minuman ditelan atau dimuntahkan. Mekanisme neurobiologis transduksi sinyal rasa (dan sisa rasa) dari reseptor rasa di mulut ke otak belum sepenuhnya dipahami. Akan tetapi, area pengolahan rasa utama yang terletak di insula telah diketahui terlibat dalam proses persepsi sisa rasa.[4]
