Setup adalah pencampuran bahan makanan yang dimasak dalam cairan dan dihidangkan dalam kuah. Bahan makanan dalam sebuah rebusan dapat meliputi percampuran sayuran (seperti wortel, kentang, kacang-kacangan, paprika dan tomat) daging (seperti daging sapi dan daging unggas), sosis, dan makanan laut juga digunakan. Sementara air yang digunakan adalah cairan yang digunakan untuk merebus, arak, kaldu, dan bir juga umum. Penyedap rasa dan bumbu juga ditambahkan.

Penyetupan

Penyetupan adalah teknik memasak bahan pangan yang sudah dipotong kecil-kecil terlebih dahulu dengan menggunakan cairan yang sedikit. Penerapan penyetupan antara lain pada opor dan rendang sehingga terkadang dikenal dengan nama penggulaian.

Karakteristik teknik penyetupan yaitu bumbu ditumis terlebih dahulu sebelum direbus dengan cairan berbumbu menggunakan api sedang. Metode masak ini menggunakan suhu rendah, yaitu sekitar 82–96 °C.

Temperatur masak yang rendah ini membuat proses memasak membutuhkan waktu lebih lama. Namun, nutrisi dan kandungan gizi bahan makanan tetap terjaga sehingga lebih sehat. Jadi, penyetupan juga termasuk metode masak lambat.[1]
