Saksang Ayam

Saksang Ayam adalah masakan khas yang berasal dari suku Batak Toba di provinsi Sumatera Utara. Saksang ayam menggunakan olahan dari daging ayam. Meskipun ada juga sebagian masyarakat yang memasak saksang menggunakan olahan daging babi yang biasa disebut dengan istilah B2. Ada pula masyarakat yang memasak saksang menggunakan daging anjing atau dikenal dengan B1, daging kerbau, hingga daging sapi.[1]

Filosopi

Makanan saksang ini konon dimasak dengan menggunakan campuran darah dari hewan yang digunakan atau dikenal juga ‘margota’, sehingga penggunaan rempah-rempah yang banyak tersebut bertujuan untuk menghilangkan aroma amis dari percampuran darah dan daging. Namun, ada juga saksang yang diolah tanpa menggunakan darah yang disebut dengan ‘naso margota’.[1]

Penyajian

Masakan saksang terkenal karena memiliki aroma yang harum dengan rasa yang pedas dan ciri khas bumbu yang kuat akan rempah-rempah seperti bawang merah, bawang putih, cabai, ketumbar, serai, jahe, lengkuas, kunyit, daun jeruk, dan daun salam. Kuliner ini juga biasanya diberi tambahan andaliman alias merica batak.[2] Daging ayam akan dipotong kecil-kecil yang kemudian akan diolah bersama dengan bumbu dan rempah-rempah yang khas dari Batak toba.
