Roti lapis Denver (bahasa Inggris: Denver sandwich, atau istilah lainnya Western sandwich) adalah roti lapis yang terdiri dari telur dadar ala Denver (dibuat dengan bahan ham, bawang, paprika hijau, telur orak-arik) dan diletakkan dalam dua buah roti.

Roti lapis ini telah diklaim diciptakan oleh banyak orang yang berbeda, termasuk pemilik restoran di Denver bernama Albert A. McVittie pada tahun 1907 serta M. D. Looney, dari Denver, pada tahun yang sama. Juga telah diklaim bahwa "roti lapis Denver" ditemukan di Tabor Hotel di Denver, tetapi menyebutkannya di surat kabar sebelum semua pengklaim ini.[1]

Serta di awal tahun 1908 itu lebih dikenal dengan "Western sandwich", tertulis di koran harian San Antonio. Manhattan sandwich (tertulis di koran tahun 1909) juga mirip karena bahan isian yang juga menggunakan telur goreng, ham cincang, dan bawang.

Penulis makanan James Beard dan Evan Jones percaya bahwa roti lapis Denver atau Western sandwich sebenarnya dibuat sebelumnya oleh "banyak koki Cina yang memasak untuk kamp penebangan dan gerbong kereta api pada abad ke-19 dan awal abad ke-20" dan mungkin berasal dari puyonghai.[2][3]
