Roquefort adalah keju biru dari Prancis yang dibuat dengan susu domba mentah.[1] Keju ini berasal dari Rouergue yang dahulu merupakan salah satu provinsi di negara Prancis.[1] Untuk memenuhi permintaan, susu domba yang digunakan untuk membuat keju ini dapat diimpor dari Korsika ataupun Pyrenees.[1] Keju Roquefort berbentuk silinder dengan diameter 19 sampai 20 sentimeter dan tinggi 10 hingga 99 sentimeter.[1] Berat dari keju ini berkisar antara 2.5 hingga 3 kilogram.[1] Keju ini tidak memiliki kulit dan bercorak abu-abu kehijauan akibat jamur yang digunakan pada proses pembuatannya.[1] Cara tradisional dalam penggunaan jamur adalah dengan menaruh roti gandum hitam disebelah keju Roquefort.[2] Roti tersebut didiamkan selama 70 hari sehingga menjadi kering dan berjamur.[2] Kemudian roti tersebut digiling hingga menjadi bubuk halus dan ditaburkan pada dadih.[2] Keju Roquefort dimatangkan selama tiga bulan dan prosesnya haruslah dilakukan di gua Roquefort-sur-Soulzon di daerah Midi-Pyrenees.[1]
