Protein serat atau skleroprotein adalah salah satu dari tiga jenis struktur protein (bersama protein globular dan membran).[1] Protein serat terdiri dari kumpulan rantai polipeptida yang membentuk struktur berfilamen dan seperti lembaran. Berbeda dengan protein globular, protein serat memiliki kelarutan yang rendah di dalam air. Protein ini berfungsi menyusun struktur tubuh dan rangka makhluk hidup seperti jaringan ikat, tendon, tulang rawan, dan serat otot[2].

Contoh protein yang tergolong ke dalam jenis ini ialah keratin, kolagen, elastin, dan fibrin. Kolagen adalah protein serat yang paling melimpah di mana kolagen terdapat dalam jaringan ikat vertebrata seperti tendon, tulang rawan, dan tulang keras.[3]

Struktur biomolekul

Protein berserat berbentuk filamen protein panjang, yang menyerupai batang atau kabel. Protein serat juga memiliki sifat lengai (tidak mudah bereaksi) dan tidak larut dalam air. Sifatnya yang cenderung nonpolar disebabkan oleh strukturnya yang didominasi oleh gugus samping hidrofobik[2].

Protein berserat cenderung tidak mudah terdenaturasi semudah protein globular.

Miroshnikov dkk. (1998) adalah salah satu peneliti yang mencoba mensintesis protein berserat.[4]
