Oyek (oyèk) adalah penganan yang dibuat dari tepung gaplek, diberi gula sedikit, kemudian dikukus, dapat dimakan bersama kelapa parut yang telah diberi garam sedikit.

Oyek merupakan penganan pokok khas suku Jawa yang digunakan sebagai pengganti beras padi yang dibuat dari gaplek, setelah gaplek digiling menjadi tepung, kemudian dicampur sedikit air dan dibentuk menyerupai bulir beras padi, lalu dijemur sampai kering hingga menjadi beras. Dalam istilah bahasa Jawa, beras oyek yang sudah dikukus menjadi nasi disebut sêgo oyèk (bahasa Jawa baku) atau sêga oyèk (bahasa Jawa non baku).[1]

Oyek dan thiwul sebenarnya berbeda meskipun bahannya sama-sama dari gaplek, tiwul terbuat dari tepung gaplek yang langsung dikukus menjadi nasi thiwul (sêga/sêgo thiwul), sedangkan beras oyek dibuat dari tepung gaplek yang dibikin kasar dan diolah menyerupai bulir padi yang harus dijemur terlebih dahulu sampai kering.[2]

Sego oyek mulai sering dijadikan makanan pokok pengganti beras di masa perjuangan kemerdekaan Indonesia. Karena saat itu masyarakat kesulitan mendapatkan beras sebagai makanan pokok. Oyek juga dikonsumsi Jendral Sudirman saat menjalankan taktik perang gerilya menghadapi agresi militer Belanda di era 1948-1949.[3][4]
