Lipase adalah enzim yang dapat sekali bekerja dengan mengkatalisis hidrolisis ikatan ester dalam substrat lipid yang tidak larut air seperti trigliserida berantai panjang.[1] Dengan demikian, lipase tergolong dalam enzim esterase.[1] Enzim ini juga mampu mengkatalisasi pembentukan ikatan ester (esterifikasi) dan pertukaran ikatan ester (transeterifikasi) pada media bukan air.[2] Lipase diproduksi pada karbon berlipid, seperti minyak, asam lemak, dan gliserol.[3] Lipase dari bakteri kebanyakan diproduksi secara ekstraselular.[3] yakan lipase dapat bekerja pada kisaran pH dan temperatur yang bervariasi, walaupun lipase dari bakteri yang bersifat basa lebih umum.[3] Lipase adalah serina hidrolase dan mempunyai stabilitas yang tinggi dalam larutan organik.[3]

Manfaat

Lipase dari fungi dan bakteri memainkan peranan yang penting dalam kehidupan manusia seperti pembuatan yoghurt dan keju.[4] Lipase juga digunakan sebagai katalis yang murah dan serbaguna untuk mendegradasi lipid dalam aplikasi modern seperti penggunaan enzim lipase untuk pembuatan deterjen dan biokatalis, serta juga dapat digunakan sebagai energi alternatif untuk mengubah minyak tumbuhan menjadi bahan bakar.[4]
