Laktoferin

Struktur senyawa laktoferin.

Laktoferin (atau laktotransferin) adalah protein yang dapat mengikat dan mentransfer ion Fe3+ dan terdapat dalam jumlah tinggi dalam susu dan kolostrum.[1] Protein ini pertama kali diisolasi dari susu sapi pada tahun 1939 oleh Sorensen dan Sorensen.[1] Laktoferin memiliki berat 82.600 Da dan secara spesifik dapat mengikat dua atom feri per molekulnya.[2] Selain pada susu dan kolostrum, protein ini juga dapat ditemukan pada neutrofil, ginjal, sel epitelial, dan pada cairan mukosa, seperti: saliva, air mata, sekresi usus kecil, sekresi vagina, dan lain-lain.[1] Laktoferin memiliki aktivitas bakteriostatik (anti-bakteri) yang kuat karena kemungkinan disebabkan kemampuannya mengiat ion metal yang vital bagi makhluk hidup, seperti besi.[2] Bakteri dapat mati karena kekurangan ion besi untuk tumbuh.[2] Laktoferin terdapat pada susu sebagai komponen bioaktif. setiap jenis ternak memiliki kandungan laktoferin yang berbeda-beda, kambing PE memiliki laktoferin yang lebih tinggi dibandingkan dengan kambing kacang.[3]
