Es sagwan

Es sagwan adalah minuman tradisional yang berasal dari Tegal, Jawa Tengah. Minuman ini biasanya sering dijadikan santapan berbuka puasa. Es ini disajikan hampir sama dengan cara penyajian es dawet, yaitu dengan kuah santan dan campuran dari butiran putih yang berasal dari tepung tapioka yang sudah dimasak. Kemudian ditambahkan sirop, susu, dan gula merah. Terdapat dua jenis es sagwan, tergantung dari gula merah atau sirup yang ingin ditambahkan oleh pembeli.

Es sagwan hanya dijual di enam warung saja di seluruh kota Tegal. Enam warung tersebut antara lain adalah warung di kelurahan Randugunting, Jalan KS. Tubun, Mejasem, Jalan Cendrawasih, Jalan AR. Hakim, dan di jalan Sumbodro.[1]

Hal yang membedakan es sagwan dengan es dawet adalah bahan dasar adonan cendolnya, jika es dawet menggunakan tepung beras, maka es sagwan membuat cendol dari tepung tapioka. Sebagian orang menikmati es sagwan dengan menambahkan potongan roti tawar.[2]

Sejarah

Es sagwan berasal dari nama seorang pembuat es ini, yaitu Sagwan yang berasal dari desa Pandean, kecamatan Dukuhturi, kabupaten Tegal, Jawa Tengah. Pada 1951, es ini masih bernama es pipil, disebabkan proses pembuatannya dengan cara mencicil atau mipil.[1] Versi lain menyebutkan, penamaan es sagwan disebabka


kan pada awalnya bahan utama pembuatan es ini adalah tepung sagu, sehingga disebst es Sagu dan berubah menjasi es Ssguan/Sagwan untuk memudahkan pelafalan.[3]

Namun, ada juga yang menyebutkan jika es sagwan merupakan akronim dari Seger Adem Glenggem Wangi Ancleng Nlaket. Yang berarti Segar, Adem, (ringan) diteguk, wangi, manis dan kental, lagi kenyal, yang merujuk pada tekstur dan rasa dari minuman ini.
