Es puter, Es dung dung (juga ditulis es dong dong, es tung tung, dan es tong tong) atau Es podeng adalah salah satu hidangan pencuci mulut dari Indonesia serupa es krim berbahan dasar santan sebagai pengganti susu.[1] Es puter memiliki tekstur kasar dan dibekukan secara tradisional dengan sebuah alat berbentuk tabung yang diputar-diputar di dalam es batu dan garam.[2]

Penamaan

Hidangan ini disebut es puter karena dalam pembuatannya, adonan diputar-putar dalam alat pembuat es hingga mengkristal.[3] Sementara itu, nama es dung dung diambil dari onomatope suara yang keluar dari gong mini gantung yang biasanya dipukul-pukul oleh penjual saat menjajakan esnya.[4]

Penyajian

Penyajian es tradisional ini sangat sederhana yaitu dengan cone yang berbentuk kerucut atau dengan diapit dua sisi roti tawar, atau dinikmati dalam gelas kaca. Es tung-tung pun bisa diberi tambahan, seperti potongan kacang, ketan hitam, potongan buah nangka, ataupun sagu mutiara.[5]

Sejarah

Pada awalnya es ini diciptakan atas dorongan masyarakat yang ingin mencicipi es krim, namun tak bisa menjangkau harganya. Susu yang mahal saat itu diganti dengan santan. Penggantian bahan utama inilah sebenarnya yang membuat rasa dari es ini menjadi lebih gurih. Namun, tampilannya dibuat sama persis seperti es krim.[6]

Sejarah es tung tung berawal dari keterbatasan orang Indonesia untuk menikmati es krim yang pada masa itu hanya bisa dinikmati oleh kaum tertentu. Keinginan orang indonesia untuk bisa menikmati es krim melahirkan modifikasi pembuatan es krim dengan mengganti bahan utama yaitu susu dengan santan kelapa. Dengan memadukan santan kelapa dengan buah-buahan lokal seperti kelapa muda, nangka, atau durian terciptalah es krim yang “lebih Indonesia” yang kita kenal dengan sebutan es puter.[7]

Kepopuleran es ini karena dahulu banyak pedagang es tung tung keliling yang menawarkan dagangannya ke sekitar Jawa. Kini penjual es tung-tung dengan membawa gerobak kecil sudah jarang ditemukan. Namun di pesta-pesta rakyat seperti pernikahan atau arisan, es tung-tung terkadang masih bisa ditemukan. Bahkan baru-baru ini, pabrikan es krim sekelas Wall's pun melirik varian-varian es puter dengan rasa lokal ini.
