Biji khatib


Biji khatib adalah makanan tradisional Bengkulu, bahan utamanya terbuat dari beras (beghas dalam bahasa Bengkulu).

Ada tiga macam beras bengkulu, yaitu: beras giling (beghas tutuak mesin), beras merah tumbuk (beghas basau) dan beras pecah kulit (beghas pecah kulit). Beras pecah kulit beras yang paling jarang ditemui karena jarang disimpan di rumah. Di Bengkulu juga dikenal dua macam beras ketan, yaitu beras ketan putih (beghas pulut putia) dan beras ketan hitam (beghas padi aghang).

Beras-beras tersebut merupakan bahan untuk membuat biji khatib, bahan lainnya adalah santan kelapa, santan akan memberikan rasa gurih dan lezat pada biji khatib. Selain bahan utama bumbu-bumbu yang tidak kalah pentingnya adalah kapur sirih, gula pasir, dan garam. Baik kelapa maupun sirih diambil dari pekarangan rumah mereka sendiri.[1]
