Asam arakidonat

Asam arakidonat adalah asam lemak esensial tidak jenuh. Dapat ditemukan pada hewan dan jaringan lemak manusia, organ hati, otak dan organ kelenjar dan merupakan unsur dari fosfatida hewan. Asam arakidonat dibentuk melalui sintesis makanan asam linoleate dan merupakan precursor dalam biosintesis prostaglandin, tromboksan dan leukotrin. Asam arakidonat memiliki 20 rantai karbon sebagai unsur utamanya dan 4 ikatan cis-ganda pada posisi karbon C5, C8, C11, dan C14.[1][2]

Asam arakidonat berperan dalam kestabilan cairan membran sel, eksitabilitas saraf dan transmisi sinaptik kanal ion, berfungsi sebagai enzim dan reseptor dan berperan dalam proses kematian sel. Asam arakidonat sangat dibutuhkan untuk perkembangan bayi baru lahir, untuk memperbaiki kelainan saraf dan dalam aktivitas olahraga.[2]
