Akashiyaki

Akashiyaki (明石焼きcode: ja is deprecated ) adalah nama penganan asal kota Akashi di Prefektur Hyogo, Jepang dari adonan telur, tepung terigu, dashi dan berisi potongan gurita yang dicelup ke dalam kuah dashi sebelum dimakan.

Akashiyaki sepintas lalu terlihat mirip takoyaki, berbentuk bola-bola lunak dengan diameter sekitar 3-5 cm yang sering tidak benar-benar bulat karena bagian bawah terdesak ke dalam akibat berat yang dimilikinya. Di kota Akashi, penduduk setempat yang sudah mengenal penganan ini sejak zaman Edo menyebutnya sebagai Tamagoyaki dan konon merupakan cikal bakal takoyaki.^[1]

Akashiyaki dianggap sebagai penganan unik khas kota Akashi. Makan akashiyaki (yang dijual dengan nama tamagoyaki) merupakan salah satu tujuan utama wisatawan yang datang berkunjung ke kota Akashi. Sekarang. terdapat lebih dari 70 toko yang menjual Akashiyaki.^[2]

Ciri khas

Perbedaan dengan takoyaki

Akashiyaki bertekstur lebih lunak dari takoyaki karena mengandung banyak telur dan digoreng dengan loyang berupa bulatan-bulatan cekung. Adonan juga mengandung bahan rahasia berupa tepung terigu tanpa gluten yang disebut jinko (沈粉code: ja is deprecated ). Sewaktu digoreng, Akashiyaki dibolak-balik agar bulat dengan menggunakan sumpit dapur (saibashi) dan tidak memerlukan alat khusus seperti takotaki. Akashiyaki hanya berisi gurita tidak seperti takoyaki di Osaka yang berisi gurita tapi masih ditambah berbagai macam isi. Akashiyaki dihidangkan di sepotong kayu bersama semangkuk kecil kuah dashi. Tidak seperti takoyaki, akashiyaki tidak diolesi saus dan dimakan setelah dicelup ke dalam kuah.

Piring dan loyang akashiyaki

Loyang untuk menggoreng dibuat dari perunggu berbentuk persegi panjang dengan bulatan-bulatan cekung sesuai jumlah akashiyaki yang akan dijual dalam satu set (biasanya 8-10 buah). Piring khusus untuk menghidangkan akashiyaki berupa talenan persegi panjang dari kayu yang sama luasnya dengan permukaan loyang yang dipakai. Piring mempunyai bagian depan yang lebih tinggi dari bagian belakang agar mudah kering setelah dicuci.

Tekstur akashiyaki yang lunak menyebabkan akashiyaki sulit diambil dari loyang (penggorengan) ke atas piring tanpa merusak bentuk. Sebagai pemecahannya, loyang ditutup dengan piring khusus akashiyaki dan dibalik sehingga berjajar dengan rapi di atas piring. Cara mengeluarkan akashiyaki dari loyang merupakan salah satu atraksi tersendiri.
